Last night, I made portabella mushroom risotto.
Sweet heavens.
It was divine. Seriously - after eating the leftovers for lunch, my grateful husband IMed me and said:
"You are a culinary goddess."
I have a few people to thank for this. First Melissa, for introducing me to her delightful Martha Stewart Collection dutch oven (Helpful Hint: the sky blue version I went out and bought - although not exactly in step with my personal kitchen decor - is on clearance at Macy's right now for $39.99, in store. From an original price of $99.99. There are other lovely colors available for $59.99 - but I thought I'd use the extra $20 to put towards my delicious risotto ingredients. You can also get the super awesome Le Creuset version for a bit more.). Next, allrecipes.com for the decadent Gourmet Mushroom Risotto recipe from which I worked. Also, Grand Cru (at 3433 Murphy Rd. Nashville) for the sumptuous Ruffino Orvieto white wine that splashed not only into the risotto, but also into our hearts and souls. And finally, Super Target - for surprisingly carrying all the ingredients (save the wine) I would need to create my masterpiece.
Mr. Rush, myself, and our enlarged tummys whole-heartedly thank you all.
(Scruffy is very upset that we would not let him sample your wares, save for the rogue portabella slices that escaped the sautee pan.)

Ooh, Christi - that looks great! Perfect for the cloudy, cold weather we're having. I love that dutch oven. I just might have to sneak over to Macy's! That's a steal! We may have to try that dish again during a Stepp/Rush date night!
